The term "pata negra" has always been associated with hams and shoulders of the highest quality. It comes from the fact that the best ham is produced from Iberian breed pigs, which have a characteristic dark skin and black hoof. However, there are variants of the Iberian breed in which the hoof is not black, and there are other breeds of pig (such as the Duroc) that also have a black hoof. This gave rise to all kinds of misleading tricks in the commercial use of the term "pata negra" on the labels of hams and shoulders.
Spain's 2014 Iberico law put an end to this problem. Currently the term "pata negra" can only be legally used to designate hams and shoulders coming from 100% purebred Iberian pigs (the pig's father and mother are themselves purebred Iberian) and that have been fed on acorns in the dehesa ecosystem, in an extensive regime (not in closed facilities, but in open fields and with enough space to move around and pasture and acorns to feed on).
