Me sorprendió que la paleta fuera tan oscura por fuera. Normalmente las limpian; mal por el productor.
Empecé por la maza (pezuña hacia arriba). Siempre lo hago, con jamón y con paleta. Excelente intensidad; bouquet penetrante a hierba y frutos secos. Bien de grasa: tierna y fundente, blanca tirando a rosácea, sin exageración.
La contramaza y el codillo un pelín demasiado curados para mi gusto, pero es que llegué a ella una semana más tarde.
Nada, pero que nada que envidiar a los Jabugo más renombrados.
I was surprised that the palette was so dark outside. Normally clean, bad for the producer. I started with the hammer (claw up). I always do, with ham and shoulder. Great intensity, penetrating bouquet of grass and nuts. Good fat: tender, melting, fucking white rosacea, without exaggeration. The contramaza and a tad too cured knuckle for my taste, but I got her a week later. Nothing, but nothing to envy the most renowned Jabugo.
Contrairement a la photo, le produit est arrivé tout recouvert de noir (salpetre ?)
De plus le gout etait desagrable.
Mais Ibergour nous a proposé un echange gratuit (et rapide !) avec un autre produit (5J) qui lui, nous a donné entiere satisfaction.
Je recommande ce site qui nous a montré sa reactivité.
