Pork loin sausage is made with the iliospinal muscle of purebred Iberian pigs reared on the open range in the woodlands of Spain on a diet of acorns during the montanera, supplemented at the end of the fattening period with compound feed consisting of cereals and legumes.
Processing starts with the removal of outer fat, aponeuroses and tendons. The meat is then salted, marinated in paprika and spices, stuffed into a natural colon casing and aged for 4 months minimum in natural cellars.

Je suis très déçu par ce lomo. Habitué du lomo de bellota je m'attendais à un produit de très bonne qualité de la part de Sanchez Romero Carvajal et de son expérience avec 5 Jotas.
Ce lomo avait une texture particulière, désagréable. Il contenait des morceaux de gros sel, croquant, sur toute sa longueur, ce qui me semble tout à fait anormal et ce qui ne m'est jamais arrivé avec des produits d'autres marques. Peut-être un accident survenu lors de la fabrication de ce lomo mais, compte-tenu du prix de ce type de produit, ce genre d'anomalie est totalement anormal. Je l'ai pourtant ouvert juste après réception, il ne peut donc pas y avoir eu de problème de conservation de ma part. Il a fini à la poubelle...
